Search engines love new content on a website and it can help you build brand awareness and keep customers coming back for more.
It's the same concept as a 'clothes shop' for example if the same stock is in the store and it never changes then eventually, people could lose interest in the shop. Whereas, if the shop adds new stock or changes the stock people will show more interest and visit on a regular basis.
